CARRIB-CAJUN SNAPPER This dish was inspired from my travels to Panama City, Panama where I met a Carribean Chef. I had a dish that was a beautiful whole fried snapper topped with an irreplicable seafood sauce. With that and one of my Southern infusions I topped the filet with a Cajun inspired crawfish sauce.
